Resumen

La alimentación es crucial para la calidad de vida; sin embargo, para individuos con alergias e intolerancias alimentarias, comer puede representar un desafío significativo, afectando su bienestar físico y mental. Esta investigación analizó cómo se configuran el bienestar alimentario y la experiencia de vulnerabilidad de los consumidores alérgicos y/o intolerantes al gluten y/o lactosa, considerando vivencias en restaurantes y supermercados. El estudio se realizó en la región agreste de Pernambuco, Brasil, mediante 12 entrevistas individuales presenciales. Los resultados revelan diversas influencias en el comportamiento alimentario, como precio y calidad de los productos, destacando la importancia del bienestar alimentario y los desafíos enfrentados por estos consumidores. Se proponen medidas transformadoras para hacer los establecimientos más inclusivos para este grupo.
